Smashed cucumbers with garlic
I make this recipe every time I cook something spicy. Extremely refreshing, they perfectly counterbalance a spicy dish.

- 2 cucumbers
- 6 cloves garlic
- 2 tbsp rice vinegar (otherwise white vinegar)
- 2 tsp fish sauce
- 2 tsp black sesame oil
- 2 tsp soy sauce
- 1 tsp sugar
Method
- 1Make the dressing by mixing the vinegar, fish sauce, sesame oil, soy sauce and sugar. Stir until the sugar dissolves.
- 2Chop the garlic. Set aside.
- 3If you have a long Chinese cucumber, peel part of its skin and cut it lengthwise into four.
- 4If you have a regular cucumber, no need to peel it. Being wider, cut it lengthwise into six.
- 5Remove and discard the central part with a tsp.
- 6Use a wide knife to tap with the flat of the blade to smash the cucumber. Tap hard enough to slightly flatten and crack the cucumber but not enough to break it.
- 7Cut at 45 degrees into pieces of about 2 cm.
- 8At the last moment, mix the garlic, cucumber and dressing. Serve.
Notes
Smashing the cucumber will really make a difference in flavor and will allow it to absorb more dressing. This recipe is one of the essentials if you plan to cook spicy dishes (from Sichuan for example). Because along with soy milk, it's the best way I know to calm down the effects of chili.
