Braised cabbage with pork and vermicelli

A recipe from northern China, especially enjoyed in winter. A very mild and comforting dish.

  • 300 g pork belly
  • 100 g sweet potato vermicelli (dried *)
  • 700 g Chinese cabbage (whole *)
  • 4 slices ginger
  • 2 pickled chilies (otherwise dried *)
  • 2 cloves garlic
  • 1 star anise
  • 0,5 leek (optional)
  • 2 scallions
  • 2 tsp sugar
  • 1 tsp dark soy sauce (optional)
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 200 ml chicken stock (or water)200 g
  • vegetable oil (or better, Sichuan peppercorn-infused oil *)

Method

  1. 1Soak the vermicelli in boiling water and let rest.
  2. 2Prepare the cabbage: separate the leaves. Cut the white, fleshy part (see photo) into triangles, since it takes longer to cook. Cut on the bias into large 5-6 cm pieces. Set aside.
  3. 3Tear the remaining leaves by hand into large 5-6 cm pieces. Set aside separately.
  4. 4Cut the leek on the bias into slices about 2 cm thick. Slice the ginger, garlic and chili. Mince the scallions.
  5. 5Slice the meat thinly (2-3 mm thick) after removing the skin (if needed).
  6. 6Heat a pan over high heat. Add oil (infused or not); when it starts to smoke, add the meat. Sear for 4 minutes or until the meat colors, then lower to medium heat. Push the meat to the sides of the pan. Add sugar in the middle, stir and let caramelize. Add the star anise, leek, ginger, garlic and chili. Cook 1 minute, stirring.
  7. 7Add the white part of the cabbage. Cook 2 minutes, stirring. Add the green part. Cook 1 minute, stirring.
  8. 8Add the dark soy sauce, soy sauce and oyster sauce. Stir. Add the drained vermicelli. Stir. Add the chicken stock then cover.
  9. 9Lower to gentle heat as soon as the sauce simmers. Simmer covered for 10 minutes until the cabbage leaves become tender. Taste and adjust seasoning if needed. If the dish is too liquid, cook 1 to 2 minutes more over medium heat, uncovered, to reduce the sauce. Add the scallions at the last moment and serve.

Notes

The dish can be eaten with rice. Sweet potato vermicelli can be found in Asian grocery stores. They are semi-transparent, slightly grey dried noodles. They can also be found under the name "Sweet potato noodles". Chinese cabbage or Napa cabbage can be found in Asian grocery stores. Substitute with white cabbage if needed.
