Black garlic oil "Mayu"

A highly aromatic oil particularly well suited to enhance ramen.

  • 100 ml vegetable oil100 g
  • 100 ml black sesame oil100 g
  • 12 cloves garlic

Method

  1. 1Mince the garlic.
  2. 2In a pan over medium heat, cook the garlic in the vegetable oil until it takes on colour. Reduce to very low heat.
  3. 3Stir well and continue cooking until the garlic turns black (about 10-15 minutes).
  4. 4Let cool slightly. Add the sesame oil.
  5. 5Blend for 30 seconds and set aside.

Notes

This recipe is about "burning" the garlic in a controlled way. Don't hesitate to pull the pan off the heat regularly to stop the cooking until it stops bubbling, then resume cooking. The idea at this point is to give it time to colour all the way to black without burning too fast. Black garlic oil pairs perfectly with my Tonkotsu Miso Ramen recipe
