Jiaozi and xiaolongbao wrappers

Ingredients
For:

- 280 g flour
- 160 g hot water (boiled then rested for 2 minutes)
- 2 g salt
Method
- 1Mix the flour and salt. Gradually incorporate the previously heated water into the flour.
- 2Once you have a ball and all the flour is incorporated, cover with a damp cloth and let rest for 10 minutes.
- 3Roll the dough out into a long rectangle, roll the rectangle onto itself to form a cylinder. Turn 90 degrees and form another rectangle.
- 4Repeat 5 times. Cover and let rest for 10 minutes.
- 5Repeat the rectangle > cylinder process 3 more times.
- 6Then roll the dough into a long cylinder 2 cm in diameter.
For the Jiaozi:
- 7Cut pieces of 10 g each. Flour them. With a rolling pin, roll out round wrappers 9 cm in diameter.
For the Xiaolongbao:
- 8Cut pieces of 9 g each. Flour them. With a rolling pin, roll out round wrappers 9 cm in diameter, taking care to keep the edges thinner and the middle thicker. The result should be thin enough that you can see your finger through it.
